Cremeria Opera wants to promote in Dubai the Italian and European tradition
of ice cream, coffee, pastry and pizza prepared with the best raw materials from
Middle East and the world. In addition to the homemade ice cream, customers
will be able to taste pizzas prepared with the best Italian flours and tomatoes
or they can delight their breaks enjoying crepes with a cappuccino. The target
customers we cater to are both locals and expats of all ages, as well as families
who come to Dubai to spend their holidays. Anyone can take a break with an
ice cream, a crepe, a pizza or a good coffee.

History
Cremeria Opera is a project born in 2010 from an intuitive idea of the founders: Mirko Tognetti, his wife Elisa and his sister Monica. After a period of training around Italy, useful for gaining experience from the country’s leading ice cream masters, the first shop was opened in Lucca in 2013, in Viale Luporini. The goal is immediately clear: to be able to offer a high quality natural ice cream, which makes the craftsmanship of the processes and the careful selection of raw materials its strengths. At first the product was greeted with reticence because Opera ice cream, low in fat and low in sugar, has a different taste from the norm. However, a few weeks were enough to create a passionate and growing clientele, thanks to the high digestibility of Cremeria Opera ice creams, a winning factor together with the taste and the peculiar combinations that are offered every week. The first unconventional experiment is the “Oil Gelato”: proposed as part of the “Extra Lucca” event, it was tasted and greatly appreciated by Annie Féolde, the first female chef to have obtained three Michelin stars in Italy. Within a few days, the Cremeria Opera project made the rounds of the main national and international media, from “L’Espresso” to the “New York Times”. It was the start of a success story. A crowd of onlookers gathered outside the shop, which soon turned into loyal customers. Enough to understand that the path taken was the right one and to continue experimenting. This is how new and never banal flavours are born – from bruschetta ice cream to Tuscan cigar ice cream – thanks to the intuition and technical preparation of Mirko and his staff, group of visionary ice cream makers. Today Opera has 4 shops and hundreds of passionate customers.
Mirko Tognetti
The story of Mirko Tognetti, founder and creator of Cremeria Opera is peculiar, characterised by a series of crucial ingredients: passion, determination and preparation. All of this, sprinkled with an abundant dose of dreamy inventiveness, to surprise every day by following unconventional paths. Mirko is an entrepreneur deeply in love with two typically Italian gastronomic excellences: pizza and ice cream. In 2010 he decided to transform what was a simple passion into work, starting to attend trade fairs and acquiring all the information necessary to open his own business. After a few weeks of deliberation, he opted for ice cream, a product that guarantees longer conservation standards and more extensive processing potential. So he rented a camper and, for two years, set out in search of the “grandfathers of ice cream”, the old wise men of the ice cream tradition. He therefore offered himself free of charge in the best laboratories throughout the country, going down from northern Italy to Sicily, where he meets Santo Musumeci, “his” grandfather of ice cream. In this long journey he learnt all the secrets that lie behind a correct balance, acquired solid technical skills and learnt to select the best ingredients for his combinations. it was a priceless experience: Mirko poured his experience into his project, proposing an unprecedented interpretation of ice cream not only for Lucca, the city in which he opens his shops, but nationwide. An integrator of nature and healthy food, he embarked on this new adventure supported by his wife Elisa and sister Monica. His was, and is, a dream fuelled by profound skills. Today he regularly participates in prestigious cooking shows around the world and is a leading teacher at ALMA, the International School of Italian Cuisine based in Parma. He has also opened an Academy in Lucca: Mirko finds passing on his skills highly gratifying.

Cremeria Opera: a strongly sought after, desired and defended name. The idea that leads to this successful combination of words comes from Mirko Tognetti. “Opera”, in fact, is the word that acts as the foundation of the project in many senses. First of all it is a term known all over the world and pronounced the same way everywhere. Then it recalls that concept of craftsmanship, of high quality manual work, which goes hand in hand with the naturalness of ingredients and processes: the brand thus explicitly announces its philosophy. Finally, Opera recalls the concept of a masterpiece: what Mirko and his staff try to create every day in the laboratory. Today these concepts can be found visibly in the shops.

Whoever opens the Cremeria Opera door immediately perceives a widespread feeling of nature: the taste of the ice cream, of course, but also the attention to detail, from the furnishings to the chosen colours. A concept that becomes tangible also through a fully compostable packaging, as well as our stirrers and bowls. We pay meticulous attention to nurture our philosophy on a daily basis, without compromising. We want our own customers to demand quality when they enter: a tiring path, certainly, but necessary. This is why we also focus extensively on constant staff training, so that they are able to transfer the approach we believe in to consumers.
